Decoration Day was a tradition that began after the American Civil War. Women would go to the cemeteries in the spring and decorate the graves of their dead husbands, sons, brothers, or fathers with flowers.  Eventually this came to be known as Memorial Day and became the focus of community holidays.  Many towns claim the title of ‘First to Celebrate Memorial Day’ but Waterloo, New York has the longest recorded tradition.  Alas, the ‘day’ has become a ‘weekend’ and that means that the meaning is diminished.  Plus, it is difficult to distinguish between Memorial Day and Veterans’ Day which doesn’t help. So come Monday, decorate a grave, watch a parade and remember fallen soldiers.  Then go home and eat sensibly because Monday is still a Fast Day.  What with cornmeal, stars, and red-white-and-blue, breakfast is so patriotic you’ll want to join the parade.  Dinner contains all the elements of a summer picnic, minus the ones that will fatten us.

Cornmeal Stars with Fruit Yogurt:  295 calories  4.3 g fat  6.7 g fiber  14 g protein   53 g carbs [46 g Complex]  233 mg Calcium  PB  Cornmeal and stars are SO American, that they fit in with any patriotic meal.Cornmeal Stars with Fruit

Cornmeal Stars:   This made 3 large stars, enough for 2 servings                                                            1 egg white                                                                                                                                                                      1 egg yolk, stirred                                                                                                                                                      1 Tbsp white whole-wheat flour                                                                                                                         3 Tbsp yellow cornmeal                                                                                                                                 Whip the egg to soft peaks. Fold in the yolk, the flour, and the meal. Spray a non-stick pan with non-stick spray.  Place your largest [3-4”] star-shaped cookie cutter in the center.  Spoon the batter into the star, nudging it into the corners.  Loosen the mold from the batter and remove it.  Cook the star on one side until starting to brown, then turn carefully to cook the other side.   Cool and store until needed. They freeze nicely.                                                                                                                                                      Per serving: 1.5 stars                                                                                                                                                    2 Tbsp fat-free French Vanilla yogurt                                                                                                                          2 Tbsp blueberries                                                                                                                                                     2 oz strawberries, sliced or diced                                                                                                                   Plate the stars, slightly overlapping. Dollop the yogurt on top, then strew with fruit.

Memorial Day Hot Dogs & Beans:   290 cal   PB  GF Hot dogs are traditional on Memorial Day. Baked beans are high in protein, low in fat, so they fit right in with a Fast Diet.Memorial Day franks & beans

1 dog per person {Hebrew National has a reduced-fat hot dog at 110 cal each. And they taste good, too.}                                                                                                                                                                                                                                                                                                      1/3 c baked beans [I use canned, vegetarian beans if I can find them] HINT: You do not use all the beans in the can, so freeze the remainder for another meal. Cook the dog on the grill or in a little frying pan with a bit of water.   Heat the baked beans [nuke ’em], cut up the celery & carrots. Peel the egg and cut it in half. Remove the yolk and mash it with the mayonnaise and mustard. Stuff the egg halves.  Fasting on a holiday just got easier. Have non-Fasters over for the picnic? Ask them to bring the side dishes [potato salad, green salad, but not chips & dip] and let your guests eat the side dishes.

Do you remember reading A Tale of Two Cities?  The dread of the Terror, the evil of Madame Defarge, the shoemaking of Dr Manette, the heroism of Sydney Carton — wow! What a story!  It was in the 9th grade curriculum and I read it avidly. First released in publication on April 30, 1859, it be came another hit for author Charles Dickens.  The author promotes social justice and spins a ripping yarn in the historical novel which is said to be the best selling book of all time. It is time to reread this classic.  Start over breakfast in Paris and end over dinner in London. In honor of the two cities, we will begin the day with a meal inspired by Parisian charcuterie, and end the day with Fish & Chips, but not the way they serve it in England.  The book’s plot had twists and turns, so our dinner is out of Portugal.

Charcuterie Bake:   278 calories  10 g fat   3.2 g fiber  17 g protein   37 g carbs  198 mg Calcium GF   One Sunday, we invited friends over for what we call a “French Lunch” – bread, sausage, cheese, fruit, wine, and good fellowship. My Dear Husband thought, “I know what breakfast will be.” And he was correct: left-overs reborn as breakfast.Charcuterie Bake w: pears

Set the toaster oven at 350 degrees F. Cut the sausage into a small dice. Cream together with the goat cheese, mustard, and herbes. Spritz an oven-proof ramekin/dish with olive oil or non-stick spray. Whisk the egg with the sausage mixture and pour into the dish. Bake for 12-15 minutes while you pour the beverages and slice the pear. As simple as the meal which preceeded it.

Portugese Fish & Chips:  260 calories  6.3 g fat  4.7 g fiber  24 g protein  28 g carbs [27 g Complex]  60 mg Calcium  PB GF – if using GF flour  From our favorite dinner place in Souris, PEI, 21 Breakwater comes this house specialty from the chef’s native cuisine. The batter is so light that it lets the lime-infused fish shine through. The recipe takes little time to accomplish. I have described it in detail so you can be successful.Portugese Fish & Chips

3 oz tilapia or hake                                                                                                                                                            1 fl. oz lime juice or lemon juice                                                                                                                              1 egg white + 1 egg yolk                                                                                                                                          1.5 Tbsp white whole wheat flour                                                                                                                                          3 oz sweet potato, peeled                                                                                                                                                             ½ tsp canola oil                                                                                                                                                                             ½ tsp granulated garlic  +   ¼ tsp paprika   +  black pepper                                                                                                  2 oz asparagus

Marinate the fish in the lime juice with a pinch of salt and pepper for up to 30 minutes. Set the oven to 425 F. Peel the sweet potato and cut lengthwise into 1/4” slices. Cut each slice into 1/4” sticks. Put the oil in the non-stick pan that you will use to cook the fish. Add the potato sticks to the pan and toss about to coat with oil. Combine the granulated garlic, paprika, and pepper, and sprinkle on the potato sticks. Toss to distribute the seasonings. Line a baking sheet with aluminum foil with the dull side up. Spray liberally with non-stick spray. HINT: You could do this 1-2 hours in advance.  Distribute the potatoes on the pan so they do not touch. Put in oven for 10-12 minutes. Meanwhile, put the asparagus on Low to simmer. Take the fish from the marinade and pat dry with paper towels. Dredge lightly with flour. Whip the egg white into soft peaks. Fold in the egg yolk and remaining flour from dredging the fish. Heat the non-stick pan and spray with non-stick spray. Remove the fries from the oven and turn them over. Return to oven for 10 minutes more. Dip the fish in the egg batter so that it is coated on all sides. Cook the fish on one side over medium heat for 6 minutes, then on the other side for 6 minutes or until fork tender. When fries are done, turn off oven, open the door, and leave the fries in there for up to 5 more minutes. Plate all that good food and live it up.

Fasting has always been a part of the pre-Easter season of Lent.  Eating less, eating foods that are more austere, depriving oneself of meat: these are among the things considered to be appropriate sacrifice and preparation for the sadness of Good Friday and the joy of Easter.  It would be simple to eat less during Lent: Fasting 2 days/week could be extended, and there are plenty of Fast meals which do not involve meat or eggs.         Here are some suggestions:

This recipe is easily prepared the night before and refrigerated for a quick and delicious breakfast. Groundhog Day

Ground Hog Day is a ‘cross-quarter day’ which falls equidistant between the Winter Solstice and the Vernal Equinox.  In pre-Christian times [and even beyond] it was the occasion for minor celebrations.  Our myth of the groundhog being a weather prognosticator goes back to old Germany.  Then there is the Bill Murray and Andie McDowell film, in which the anti-hero is doomed to relive the same day over and over until he gets it right.  In that vein, I will repeat myself and give you 12 tips for getting on and staying with the Fast Diet.

1. Watch the video of Dr Mosley’s program  Eat-Fast-Live which we saw originally on PBS.   http://www.dailymotion.com/video/x18a1b6_michael-mosley-eat-fast-live-longer_lifestyle     This is what inspired us to start this Lifestyle and it might help you too.

2. Plan ahead. We write on the calendar what Fast meals we want to eat in a week. Nothing ruins a diet like coming home and having no idea what to eat for dinner. That’s when the default foods come out [carry-out or pizza]. You can avoid that by planning.

3. Prep ahead. You see in many recipe the HINTS about preparing food ahead. This is a real time-saver in the morning. Want your spouse to help you to stay on the diet when you get home late? Write out the recipe, leave it on the counter, include info about where to find ingredients, and maybe the meal will be in progress when you come through the door.

4. Shop ahead. Now that you know what you want to eat, have the ingredients on hand. When Fast Day comes, you want to be ready.

5. Portion as you shop.  A recipe calls for 4 oz chicken breast: so when you get home, cut the chicken into the correct size. Wrap and label the part you need, save the trimmings for another use such as Chicken Curry or Chicken Noodle Soup. The same goes for vegetables: slice and chop those 2 oz of bell pepper that you will need.  It takes moments to do this as you unload the groceries, so do it to save time later.

6. Listen to Diane Rehm interview Dr. Mosley.  http://thedianerehmshow.org/shows /2013-03-13/dr-michael-mosley-fast-diet  Diane asks the tough questions and ends the conversation by saying that everyone on her staff can’t wait to try the diet!

7. Make the meal setting special. Instead of eating on the run or while standing over the sink, make a Fast meal an occasion. Use the good plates and flatware. Put the sparkling water in a nice glass with a twist of lemon. See the demitasse cup in the photo?Entire Breakfast It is the only one I have and it makes the breakfast table so pretty that it is saved for Fast days only.

8. Slo-o-o-ow down the meal. The other reason for the little cup at breakfast? By putting the coffee in a pitcher, I frequently have to stop to refill the cup. This bit of fussiness slows down the process. When you put food in your mouth, put down the fork. You don’t have to chew 30 times, but don’t simply cram the food in your mouth — savor it, taste it, and make it last.

9. Set goals by the clock.  After breakfast, vow not to put any calories in your mouth until noon. Then at noon, tell yourself that you can hold out for another 2 hours. Maybe setting a timer will help you: while the timer is ticking, don’t eat. This does not mean that you will eat when the timer rings! No. Set a new goal.

10. Distract yourself. After breakfast, I pour a large [1.5 cups] glass of water which I sip on until 2 pm. Then I have earned a hot cup of tea — something bold-tasting or soothing as mood dictates. A touch of honey in the drink provides a real lift. Mid- to late afternoon is difficult for me. Go for a walk [not to the kitchen or break-room!] or get involved in a long project to take your mind off eating.

11. Hide the temptation.  I stash the bowl of pistachios in the cupboard on Fast Days. Yes, I still know they are there, but out of sight, is out of mind.

12. Don’t Stop Thinking About Tomorrow. This has a double meaning. 1] If you yearn for something on a Fast Day, tell yourself that you can have it tomorrow. It is not a promise that you have to keep. Tomorrow it might not be calling to you.  2] Tomorrow is the day that you will weigh less. Tomorrow is also weeks from now when you will be slimmer and thinking about new clothes. Tomorrow will come.

Stocking Up

During the Back-to-the-Land movement in the 1960s and ’70s, one of the ‘bibles’ of the people was Stocking Up, published by Rodale Press. It instructed the nascent homesteaders in the ancient arts of preserving food: canning, freezing, drying.  The goal was to save the harvest for times when food was not so available. When dieting, it is a good idea to have some meals in the freezer or foods in the pantry so that you are not caught short on a Fast Day wondering what to eat.  So here are some foods to make in multi-meal batches: prep once, eat often. It pays to stock up.

Seafood Chowder:  275 calories  11 g fat  15 g protein   16 g carbs  GF This makes 10 [TEN!] one-cup servings. It freezes nicely, or it can feed the family.  My husband found the recipe in Yankee magazine. He prepares this every year. It is wonderful. The directions look long and involved but the results are worth it.

4 strips thick-cut bacon, diced        1 medium Spanish onion, diced                                                                                                                                                                                                                                                 1 pound baking potatoes, peeled + cut in ½” cubes                                                                                            2 pounds steamer clams in their shells                                                                                                       one lobster, weighing 1.5 pounds                1 pound scallops                                                                                                                                                                                                                                                                                 1 pound shrimp, peeled         1 quart whole milk       4 Tbsp butter                                                                                                                                                                                                                                                                                                                                                                                                                                              2 sprigs parsley, finely chopped     ¼ tsp paprika + salt + pepper                                                                                                                         

In a medium skillet or saute pan cook bacon until brown and crisp. Remove bacon and reserve. Pour off all but 1 Tbsp fat and add the onions. Cook slowly over low heat, stirring, until translucent [10 mins?]. Set aside with the bacon in a large bowl.

In a separate saucepan, cover cubed potatoes with salted water and boil until almost tender, about 15 minutes. Drain and add to the bacon/onions. Put clams in a large pot and add 1 quart water. Heat to boiling, cover, and cook until clams open, about 3 minutes. Remove the clams but leave the liquid in the pot. Strain the liquid through a sieve lined with paper towel. Remove the clams from their shells and cut them into smaller pieces if necessary. Add to the potatoes, onion, and bacon.

Put the strained clam broth back into the empty pot and bring to a boil. Add the lobster head-first into the boiling broth. Cover and cook for 20 minutes. Remove lobster and let cool. Crack the shell to remove the meat. Cut the meat into 1/2” chunks and add to the potatoes. Heat the broth until boiling. Add the scallops and shrimp. Reduce heat to low. Simmer about 3 minutes, until the scallops + shrimp are just cooked through. Add all the previously cooked ingredients, along with the milk, butter, parsley and seasonings. Heat until steaming but not boiling.

Cover and cool. Let the pot sit in the ‘fridge or on a cool back porch for 12-24 hours. This really enhances the flavors. When ready to serve, heat to steaming hot but do not boil. Freeze what is left over in freezer containers which are the same size as a serving.

Felafel:    1 batch = 648 cal  25.4 g fat  21 g fiber  32.5 g protein    72 g carbs    214 mg Ca                   each patty = 30 cal 1 g fat 1 g fiber 1.6 g protein 4 g carbs 8.5 mg Calcium      GF PB From the good old Moosewood Cookbook by Molly Katzen, these are easy to prepare and, since it makes 26 patties, you will be set up for several future meals.

Felafel w: Cuke Raita

2 cups canned chick peas — [if you use dried chickpeas, you will get a grainer product. Factor in the time to cook them]                                                     1.5 cloves garlic, crushed [add as much as you enjoy!]                                                                                 ¼ cup celery, minced      ¼ c. scallions, sliced        1 egg                                                                                                                                                                                                                                                                                                                                                                                                                                                                                      1.5 tsp tahini        ½ t. cumin  ½ t. turmeric                                                                                                                                                            ¼ t. cayenne  ¼ t. black pepper  1.5 t. salt

Combine in food processer until ingredients form a uniform paste. Scoop into a bowl and chill 1 hour. Form into balls on a silicone mat or parchment paper on a cookie sheet. I used a 1 and 1/2 Tbsp scoop and then flattened the patties. TIP: You don’t have to bake them now. You could freeze the patties on a cookie sheet, then put them frozen into bags to cook later. Bake at 400 degrees for 10-15 minutes. The patties should be heated through and have an outside ‘crust’ which is firm to the touch. In most recipes, you will cook them further. At this point you want them to be firm enough to store well. There will be about 25 of them. Use now or cool and freeze for later use.

Next, stock the pantry.  Here are some things I always keep on hand:       garbanzo [chickpeas] beans, red kidney beans,  large white beans [Cannellini /Alubias], diced tomatoes, canned tuna, chicken stock With these ingredients, you are on your way to a bowl of chili or a plate of antipasto.

On another day this week, eat the meals from a different post, another day of eating 600 calories or less. Eat sensibly the other days of the week. That’s it. Tomorrow marks the birth of one of science’s giants: Isaac Newton, born Christmas Day 1642, in Wollsthorp, Lincolnshire, England.  His mother had been widowed a few months earlier and her baby was premature — a dismal start for any child. Despite a difficult childhood — his mother gave him away to her parents to raise when she remarried — Isaac somehow grew up to be a mathematics prodigy.  He invented the Calculus; wrote the three Laws of Motion; determined why the moon stays in orbit around the Earth; developed the concept of gravity — all before his 24th birthday. Newton served as the Director of the National Mint, in charge of stamping coins and also countering counterfeiting. He demonstrated that light from the sun is actually made of seven different wavelengths which we see as colors. Newton was typical of his age in that science was the hobby of a gentleman. He had a prickly personality, being scornful of those who did not understand his new ideas, but he was elected a member of the Royal Society and became its influential president. Newton was one of the leading lights of the Age of Enlightenment, able to ‘see’ farther than other scientists and academics because he “stood on the shoulders of giants.”

We will observe his natal day and the birth of modern physics with some very English meals: Toad in the Hole and Pork with Apples.  ‘Apples.’  Get it? Newton saw an apple falling from his tree [it did NOT hit him on the head] and intuited the effect of gravity on all things. Whew.

Toad in the Hole:  298 calories   1.7 g fat  3.9 g fiber  14.5 g protein   79 g carbs  190 mg Calcium This whimsically-named meal is of old English origin – shades of Kenneth Graham and Beatrix Potter. The recipe is from the Fannie Farmer Cookbook. It begins with a Yorkshire Pudding batter which you need to prepare in advance. The Yorkshire Pudding recipe is from the King Arthur Flour 200th Anniversary Cookbook. HINT: make the batter the night before to save time in the morning.

Toad in the Hole w: Apples

Yorkshire Pudding Batter:       one 2-oz egg      ½ tsp salt           1/2 cup unbleached flour                                                            ½ cup white whole wheat flour         ½ cup water         ½ cup fat-free milk                         Mix all the ingredients together and let the batter stand at room temp for 30-60 minutes or in ‘fridge overnight. You will need 1/4 cup of the batter per person. HINT: The remainder can be frozen in 1 cup or 1/4 cup batches for future meals. When it is time to use the batter, beat it with a rotary beater until it is frothy.

For the breakfast:                 1 breakfast sausage [chicken sausage @ 50 cal/link]                               1/4 cup Yorkshire Pudding batter, well beaten                         pinch of crumbled sage                                                                                                                                         2 oz pear or apple       Optional: blackish coffee [53 calories] or blackish tea or mocha cafe au lait [65 calories] or lemon in hot water  Optional: 5-6 oz fruit smoothie or berry-yogurt smoothie  [88 calories]

Heat the oven/toaster oven to 425°F.  Cook the sausage, using a bit of water in the bottom of the pan since the sausage will render no fat. Pour out any remaining water from cooking the sausage. Spritz 5 holes of a mini-muffin pan with non-stick spray. Dice the sausage or slice into 20 pieces, and put the sausage in the mini-muffin pan. Beat the batter until it is foamy, adding crumbled sage. Pour the batter over the sausage bits in the pan. Pop the pan into the oven for 15 minutes. Slice the fruit, shake your smoothie, brew your beverage, and settle down to a quickly-prepared, fun-to-eat meal.

Pork with Apples:  273 calories   8.1 g fat   4 g fiber  22.7g protein   18.8 g carbs   84 mg Calcium  PB   Long a favorite combination in lands where apples grow; where local meats and local fruits are blended in hearty meals, the flavor of pork with apples is a winner.

Pork & Apples

3 oz pork tenderloin, raw or cooked                                   2 oz round slices of apple, unpeeled                                                                                                               ½ oz cubed apples, unpeeled                                1/4 cup chicken stock                                                                                                                                                           4 Tbsp Béchamel sauce, no cheese                 thyme/sage salt + pepper to taste                                                                                                                       1 oz broccoli florets            1 oz cauliflower florets                         1 oz carrots 

Poach the apple slices in the stock until they are tender. TIP: if cooking for 2, this may require poaching in 2 batches. Remove slices and reserve. Slice the pork into rounds about 1/4” thick. If pork is raw, braise it briefly in the hot stock, and remove from stock. Put 1 Tbsp stock in the oven-proof pan in which you will cook the dinner. Combine diced apples, Béchamel, seasonings, and remaining stock in the sauce pan, stirring until apples are soft and sauce is medium-thick. Adjust seasonings. Arrange alternating slices of pork and apple in the baking pan. Nap with the sauce and bake at 350 until warmed through, about 20 minutes. Steam the vegetables and enjoy a hearty winter meal.

Tomorrow will be May The Fourth, which Star Wars Fans recognize as a day to celebrate since the words sound like “May the Force….be with you.”  Yeah, it’s a stretch.  Anyhow, since the only food you ever see anyone eat in the entire film series is the ghastly-looking blue smoothie which Aunt Beru prepares on Tatooine, I thought that today we should talk about smoothies.

Smoothie benefits:  Fruit juice alone has lots of sugar. It is like drinking a soda-pop! But when you retain the fruit’s fiber, whether from fruit or vegetable, it changes the sugar’s effect on your body. Plus, the added fruit and/or vegetables give you a much-needed serving of the same. When drinking a green smoothie, by pureeing the greens, you are making them into their most digestible form. This means that all the micro-flora in your gut will thank you and that your lower intestines will be healthier and will work better.

BREAKFAST SMOOTHIES, TO DRINK INSTEAD OF JUICE                                                            *Fruited Green Smoothie:    77 calories    0.3 g fat    1.6 g fiber      1.7 g protein     31.3 g carb    30.7 mg Calcium    PB GF     HINT: this makes enough for three 6-oz servings, so it will save you time on the next 2 breakfasts.  In the photo, the green smoothie is served with Tostada.

Tostada w: green smoothie

2 cups mixed greens – spinach, romaine, lettuce, chard – roughly chopped                                       2 oz banana, sliced                                                                                                                                                  2 oz berries                                                                                                                                                                                   ½ apple or pear                                                                                                                                                       12 oz tomato juice [such as Knudsen’s organic] 10 ice cubes

Put the fruit and greens in the blender and swirl it together on ”high” just long enough to break down the fruit and greens. Set blender to “low,” add the juice and ice cubes. Process until smooth. Put what you don’t drink today into a jar in the ‘fridge. Next time you use it, shake it well. If you think it has become too thick, feel free to thin it with water or OJ.

Smoothie kits

*M&Ms Fruit Smoothie:    80 calories      0.4 g fat       3.5 g fiber       4.2 g protein      16.2 g carb     131 mg Calcium      This recipe is from the Fast Diet book, further quantified by me.   PB GF   HINT: this makes enough for 2 servings, so reserve the rest for another breakfast which will save you time.

6” of banana [3.0 oz]                                                                                                                                                ½ cup plain, non-fat yogurt                                                                                                                                  2 oz fruit[either ½ cup mixed berries or 7 one-inch strawberries]                                                         8-10 ice cubes                                                                                                                                                            Blend at low speed at first to break up the fruit, then at higher speed to blend.  HINT: I make up ‘kits’ in advance.  Into a freezer-safe container, I place all the ingredients except the ice cubes and freeze it days to weeks in advance. The night before a Fast Day, the Smoothie Kit comes out to thaw on the counter overnight. Much simpler.  Kits shown in photo above.

Fruit Smoothie, chez nous

They could go into the blender frozen or leave the ‘kit’ on the counter overnight to thaw. Another time-saver! Put the fruit in the blender with 4 0z of the orange juice. Run it on “High” to break up the fruit and make it all smooth. Switch setting to “Low” and add the remaining juice. Run blender to combine the liquids. Save the rest in a jar for other mornings.

*Fruit Smoothie w/ greens, ME:       74 calories        0.1 g fat         1.0 g fiber        0.5 g protein 16.5 g carbs      29.4 mg Calcium      PB GF   This is the smoothie that we have used for years, and then I added some spinach, so it is a synthesis of the 2 previous smoothies. HINT: this makes enough for several breakfasts, so make it once and use it often. A real time-saver.

 2 oz banana                                                                                                                                                                                  2 oz berries [black currants, strawberries, blueberries, red or black raspberries, blackberries – any combo] HINT: I make these up in ‘kits’ and keep them in the freezer. They could go into the blender frozen or leave the ‘kit’ on the counter overnight to thaw. Toss the fruit and greens into the blender. Add 1/2 cup orange juice. Process on high to blend the fruits and puree the leaves. Turn down to lowest setting and add the remaining juice. Process until smooth. Keep the setting on ‘low’ at this point, unless you like your smoothie with a huge head of foam!

Then run it at a higher speed until it is smooth.                                                                                                                         Cocoa-Banana version: add 2 Tbsp cocoa to above recipe.

*Strawberry Tofu Smoothie: Half Batch =  199 calories   3.4 g fat  3.7 g fiber   14.2 g protein    26 g carbs     360 mg Calcium   1.5 Batch=  300 calories  5.1 g fat    5.5 g fiber     21.3 g protein     39 g carbs     540 mg Calcium PB GF   HINT: Makes 2 portions as part of a meal. Put everything in the blender and wizz it on “Low” until it is all blended. Then run it at a higher speed until it is smooth. If you want to, add another ½ cup of yogurt, or skimmed milk which will add more volume and bring the calorie count to 259. Then you might use it as an entire meal.  Dust the top with freshly-grated nutmeg.

Many a diner and small restaurant has lured customers with promises of ‘country cooking.’  Many cookbooks have been written about the way people cook in the countryside of France, England, Germany…..you get the point.  For my taste, give me good tasting food made from fresh country products.  And we can enjoy it on a Fast Day, too.  Clean your plate.

Hash and eggs is a classic diner item.  But our’s is healthy and delicious with black beans and sweet potato.    From Joanne Harris’ cookbook of the French countryside, comes a recipe from the ocean and the fields. ½ c. diced sweet potatoes [You could substitute ½ cup of diced winter squash, which lowers the calories, protein, and carbs]                                                                                              2 Tbsp yellow onion, diced                                                                                                                                ¼ red pepper, sliced                                                                                                                                              salt & pepper + ¾ tsp paprika + ¼ tsp cumin                                                                                                ½ cup spinach roughly chopped                                                                                                                         3 oz black beans = ½ c.                                                                                                                                           one 2-oz egg                                                                                                                         blackish coffee or blackish tea or lemon in hot water                                                   NB: no smoothie today

Spritz olive oil in a small cast iron pan on medium heat. Add sweet potatoes, onion, red pepper, seasonings, and a little water. Cook on medium-low for 10 minutes, occasionally stirring. Add spinach and 2 more Tbsp water, and cook for an additional five minutes. Lastly, add the black beans and stir until all ingredients are well-blended. HINT: prep this far the night before. Heat before topping with a poached or fried egg.

Two 2-oz mackeral fillets to total 4 oz per serving                                                                                       salt & pepper                                                                                                                                                             2 tsp grainy mustard, like ‘country Dijon’                                                                                            oregano                                                                                                                                                                     ¾ of an ounce of sliced leeks                                                                                                                            ground coriander                                                                                                                                                                                            3 oz tomatoes, sliced OR sliced cucumbers and cherry tomatoes

Heat oven to 400 degrees. Slash the skin of the fish and season the skin-side with salt and pepper. Turn the fillets over and spread each one with mustard, then sprinkle with oregano. Put one fillet skin-side down on the baking pan and pile the leeks on top of it. Sprinkle with a little coriander and more pepper, if you like. Put the other fillet on top of the leeks, with the skin-side up. Press down a little on the fish to compact it a bit. Roast for about 12 minutes, until the fish is opaque. Meanwhile, slice the vegetables.

Just today I was asked if I would be Fasting this week of Christmas. Well, I’ll admit that I’m glad that Christmas will be on a Friday, not Thursday. Fasting can occur as usual on a special day with a little thought. plan A: If you know you must go for the whole Feast for dinner,  have a regular Fast Day until then: a 300 calorie breakfast, no lunch, lots of water, and be sensible in eating at dinner.  plan B: French toast for breakfast and seafood chowder for dinner. The chowder [first posted November 25, 2015] is what we eat on Christmas Eve every year — delicious, out of the freezer [if you made a batch before Thanksgiving in November], and something that you look forward to, instead of feeling deprived.

French Toast    300 caloriesChristmas Tree French Toast

HINT: This recipe makes 4 [four] slices of French Toast. Prepare all 4, but put the other 2 in a bag in the freezer for a really fast breakfast later.                                                                                                         4 slices 70-cal whole grain bread, with a Christmas Tree cut-out                             one 2-oz egg                                                                                                                                    2 Tbsp fat-free milk                                                                                                                  2 oz strawberries, fresh or unsweetened frozen                                                                   1 and 1/2 tsp maple syrup                                                                                                         one 60-cal sausage — I like Al Fresco brand sage breakfast links                         nearly black coffee or tea or lemon in hot water                                                      green or fruit smoothie or natural apple cider

THE NIGHT BEFORE: Whisk the egg and milk together. Cut the pieces of bread into Christmas Tree shapes, using a cookie cutter. [This step is important for the calorie count to come out right, so don’t skip it even if it seems too much like ‘crafty food.’  Feed the remaining bread to the birds or save for preparing Stuffed Clams, [Aug. 9 , 2015] Put the tree-shaped bread into a rimmed pan which is just big enough for the 4 bread pieces. Pour the egg/milk mixture over the bread, making sure it is all wetted. Let stand OVERNIGHT. Also combine the strawberries and syrup in a microwave-safe bowl.

The next morning, cook the batter-soaked bread in a hot non-stick pan with a spritz of non-stick spray. Cook until browned on both sides. Cook the sausage, too. Mash the berries a bit and add the maple syrup.   Warm the mixture a little and smear onto the plated toast. Enjoy with the sausage, hot beverage of choice, and green smoothie.

Seafood Chowder   275 calories  11 g. fat  15 g protein   16 g carb  GF This makes 10 one-cup servings. It freezes nicely, but it is great fresh! My husband found the recipe in Yankee magazine. He prepares this every year. It is wonderful. The directions look long and involved but the results are worth it.Seafood chowder on Wedgewood tile

4 strips thick-cut bacon, diced                                                                                     1 medium Spanish onion, finely diced                                                                                   1 pound baking potatoes, peeled + cut in ½” cubes                                              2 pounds steamer clams in their shells                                                                            one lobster, 1 and ½ pounds                                                                                                                                1 pound scallops                                                                                                                            1 pound shrimp, peeled                                                                                                                                      1 quart whole milk                                                                                                                   4 Tbsp butter                                                                                                                                   2 sprigs parsley, finely chopped                                                                                         ¼ tsp paprika plus salt + pepper to taste

In a medium skillet or saute pan cook the diced bacon until brown and crisp. Remove bacon and reserve. Pour off all but 1 Tbsp fat and add the onions. Cook slowly over low heat, stirring, until translucent [10 mins?]. Set aside with the bacon in a large bowl.

In a separate saucepan, cover cubed potatoes with salted water and boil until almost tender, about 15 minutes. Drain and add to the bacon/onions.

Put clams in a large pot and add 1 quart water. Heat to boiling, cover, and cook until clams open, about 3 minutes. Remove the clams but leave the liquid in the pot. Strain the liquid through a sieve lined with paper towel. Remove the clams from their shells and cut them into smaller pieces if necessary. Add to the potatoes, onion, and bacon.

Put the strained clam broth back into the empty pot and bring to a boil. Add the lobster head-first into the boiling broth. Cover and cook for 20 minutes. Remove lobster and let cool. Crack the shell to remove the meat. Cut the meat into 1/2” chunks and add to the previous ingredients.

Heat the broth until boiling. Add the scallops and shrimp. Reduce heat to low. Simmer about 3 minutes, until the scallops + shrimp are just cooked through.

Add all the previously cooked ingredients, along with the milk, butter, parsley and seasonings. Heat until steaming but not boiling.

Cover and cool. Let the pot sit in the ‘fridge or on a cool back porch for 12-24 hours. This really enhances the flavors. When ready to serve, heat to steaming hot but do not boil. Freeze what is left over in freezer containers which are the same size as a serving.

Many people resist dieting because they think that diet = vegetables = privation = bland food. Not so!  The Fast Diet permits a great variety of foods, as long as the menus are full of protein and are low in fats and carbs. And we can eat our veggies in creative ways!

Vegetable Scramble    295 calories          PB          HINT: use left-over vegetables or prepare them the night before for a quicker preparation.

Vegetable Scramble w: toast, apple

½ cup chopped green pepper     ½ cup chopped zucchini  ½ cup chopped tomato          1 ½ two-oz eggs HINT: If you are serving one person, crack three 2-oz eggs into a small bowl or glass measuring cup. Whip up those eggs and pour half of their volume, crack 3 2-oz eggs into a jar with a lid and put it in the ‘fridge for next week        2-3 oz apple ½ piece of 70-calorie whole-grain bread       USE GLUTEN FREE BREAD IF YOU WISH                                                                                                                                                                                                                                                                   Optional: 5 oz fruit smoothie or berry-yogurt smoothie [88 calories] Optional: blackish coffee [53 calories] or blackish tea or mocha cafe au lait [65 calories] or lemon in hot water 

Put the raw vegetables in a small saute pan with a few tablespoons of water. Simmer until vegetables are cooked and the liquid is evaporated. Pour eggs into a pan which has been sprayed briefly with cooking spray. Before the eggs set, add the cooked vegetables. Scramble to taste. Brew your beverage and take the previously-made smoothie from ‘fridge. Plate with fruit.

Minestrone Soup

Minestrone Soup: 1 cup = 145.5 calories 3 g fat 5 g fiber 8 g protein 27 g carbs 86.4 mg Calcium   PB  GF [if you use GF pasta] This recipe can be doubled easily. It is a fine dinner soup for a hot Summer day or in the cold of Winter. Prepare it from leftover vegetables to reduce the cooking time.  HINT: One serving = one cup, but you could go to 1 ¼ cups each. This recipe made 4 cups for me – several future meals from one recipe!

1 tsp olive oil
1 cup onion, chopped
2/3 cup carrot, chopped 
½ cup celery, chopped
2 cloves garlic, chopped 
3 slices pepperoni, chopped 
Prepare all these ingredients and put into a sauce pan together. Cook over medium heat until onions begin to wilt. 
NB: if using left-over cooked carrot and celery, add them in the next step.
½ cup sweet potato, cubed
½ cup zucchini, diced 
½ cup mushrooms, chopped
2 cups crushed tomatoes 
¾ cup small white beans, canned
lots of sage and rosemary, chopped 1 cup water
2 cups chicken broth/stock
NB: low sodium broth is preferred
Prepare the vegetables as described. Drain and rinse the canned beans. Add these to the pan, along with the water and broth. Cook at a simmer for about 20 minutes
NB: if using left-over cooked sweet potato, zucchini, and other vegetables, add them to the broth after 10 minutes of cooking.
1 oz pasta, whole wheat is preferred to boost fiber [orzo/ dinetelli/broken spaghetti]Add the pasta and cook until it is soft, 5-6 minutes.
2 tsp Parmesan cheese, grated 
salt and pepper to taste
Add remaining seasonings and adjust to taste. TIP: Soup is always improved by letting it sit for several hours before reheating and serving hot.
